Mr. James Adero Obar is a Research Assistant in Food Science Department, Egerton University, Kenya. James is a Food quality and safety specialist. He is a professional member of Kenya Institute of Food Science and Technology. He has worked for two years as Laboratory Analyst and ten years as Quality Assurance Manager in Fish processing and export industries. He has also lectured food science courses at Bugema, Rongo and Egerton Universities. He holds a BSc in Fisheries from Moi University and MSc in Food Science from Egerton University, Kenya, where he researched on The in vitro effects of lactic acid bacteria screened from gastrointestinal tracts of Lates niloticus on E. Coli and Salmonella spp. Mr. Obar has also published scientific papers in refereed journals and a number of conferences proceedings. He is currently pursuing his PhD research at Egerton University entitled Post-harvest handling and probiotic utilization in production and preservation of fish in aquaculture system in Kakamega, Kenya. Besides, he is also doing research with One Health, Horn entitled Relationships between Livestock and Vegetable production and consumption practices on Health and Nutritional outcomes in children under five years in Laikipia, Kenya.
